0 Peanut Butter Cupcakes =]

Friday, May 13, 2011
Oh, yes, I did. Peanut butter... cupcakes. The recipe came from >HERE< they're number seventeen, and I'm so glad I didn't discount the entire list after the apple snafu. These were so good, heavy, but good. Here they are:
Not the most attractive things in the world by a long shot but I promise that's only because you can't taste them through your screen. This is what goes into them:
Easy enough, I had a lot of these things on hand, the cinnamon is new and I substituted the peanut butter in the recipe for the roast peanut and honey stuff I found in my cabinet.
Start with 3/4 stick of butter, 1 C brown sugar and 1 C peanut butter in the mixer
My camera doesn't like to see color for what it really is, I apologize
Add an egg and some vanilla extract
Add 1 C flour, some cinnamon and 1 tsp baking powder
Once you've got that good and mixed, add 1/2 C milk
It should look something like this
Bake 20min at 350F
They look so yummy!
All done! Now for the frosting:
Peanut butter, powdered sugar, milk and vanilla
And now take them from here...
To there! These were great I think I've said that already but it's the truth. I love peanut butter though so I may just be biased. If I hadn't recently developed an aversion to making the same thing more than once I may just say I'd make these again but I have and I probably won't for the simple fact that I've already made them and there are other things to make that I haven't yet made.

4 Apple Cupcakes

Monday, May 9, 2011
This is another one of those mishaps.. I'll explain more on that later, for now:
To start off with, you will need this:
Starting with the egg, sugar and oil
Mix well
Yay! Now apples
These may should've been added last, but theres only one apple in there, I recommend using a potato peeler then cutting it up.
Mix
Add the flour
Baking powder  and spices
Mix, mix
Then throw into the oven for 30min at 350F
Frosting time! You can make your favorite or whatever, I used a basic butter+milk+powdered sugar
Add a little flavor
Yay! Check on the cupcakes...
Oh.. my. well. uhm...
I'm really not sure what happened here.
I tried to salvage them in the form of like a cobbler type thing, but that didn't work out either, so I just threw it out and tossed the frosting along with it. I wasn't happy with it. the recipe came from >HERE< and I followed it, you can check me, if you see something I didn't, please comment.

0 Blueberry Cupcakes

Wednesday, May 4, 2011
I made blueberry cupcakes, NOT muffins =]
These were pretty easy and very good. I like to think they were mildly healthy even though I know that's not the case because I used actual fresh blueberries. I also like to think they should be considered breakfast because I love cake for breakfast they contain actual fresh blueberries... I found the recipe for them >HERE< along with a bajillion other recipes, fear not, I will be making some of them also. These are number 19, Heres how they turned out:
Here is all the things that go into them:
Start with half a stick of butter in the mixer
Add 3/4 C sugar
Mix it all up
Yay!
Add an egg
Pour in 3/4 C buttermilk
Mix and add 1/4 C regular milk
Add 1 1/2 C flour
Mix mix mix
Throw in 1 1/2 t baking powder
Yay!
Line a muffin tin with paper liners
Toss in a cup of blueberries (fresh ones from the produce section -not that I know of any other kind)
Stir them in
They bake for 20min at 350F
To make the frosting start with butter, its best softened
Add powdered sugar
Pour in some milk and whisk until blended
Add some maple syrup
And spread evenly onto cooled cupcakes
YAY! All done! These were really good and I don't even like real blueberries. I took them to Sunday school and brought home an empty container, I think that means they went over well =]
