Apple Cupcakes

This is another one of those mishaps.. I'll explain more on that later, for now:
To start off with, you will need this:
Starting with the egg, sugar and oil
Mix well
Yay! Now apples
These may should've been added last, but theres only one apple in there, I recommend using a potato peeler then cutting it up. 
Mix
Add the flour
Baking powder  and spices
Mix, mix
Then throw into the oven for 30min at 350F
Frosting time! You can make your favorite or whatever, I used a basic butter+milk+powdered sugar
Add a little flavor
Yay! Check on the cupcakes...
Oh.. my. well. uhm...
I'm really not sure what happened here. 
I tried to salvage them in the form of like a cobbler type thing, but that didn't work out either, so I just threw it out and tossed the frosting along with it. I wasn't happy with it. the recipe came from >HERE< and I followed it, you can check me, if you see something I didn't, please comment.

Sam, did you leave out your salt for a reason? Also, try using the full two cups of apples, and dice them up really small. Don't add them until last either. Make sure the flour mixes really well first. Hope that helps.

To be completely honest.. I always leave out the salt, I don't really have a reason other than I've always done it that way. I did read 1 C apples where it said 2 so that was a user error on my part. The batter looked a lot more like corn muffins than cupcakes and when they were starting to do weird things I had flashbacks to a time I overloaded corn muffins with extra sugar.
