Pink Lemonade Cake

Pink Lemonade Cake!!! 
Ok, so I'm pretty excited about this one, the recipe came from >HERE< and I have to say it really is as amazing as it looks.  I could've used more lemonade-ness in the cake and less in the frosting and I also want to apologize for using a box cake mix, if I had read the recipe before going to the store rather than just the ingredient list I would've made the cake from scratch. If you don't have a favorite white cake recipe you can Google it or wait until I get around to making one and blogging it but *disclosure* it's not on the list.

Here is what you need, minus the things the box cake calls for:
A lot of this is for the frosting..
Begin by following the box instructions (add the oil, water and eggs) or making the white cake batter from scratch
Add some (3 T) powder lemonade mix to the batter, if I did it again I'd use more
Add vanilla extract (a couple teaspoons)
You're supposed to add lemon zest.. but I slit the lemon and squeezed in some juice instead
Bake it! I used the cutest little 6" round baking pan from hobby lobby but you could use a bigger one if you like, there was enough batter to make 3 layers, baked for around 25min. 
Make the frosting.. I used 1 stick of butter a bunch of powdered sugar and 1/4 can of lemonade concentrate, if I had a do-over I'd use slightly less

Yeah.. but it's cute! Anyway, the cake should be done by now
Beautiful. Now frost it.
Feel free to taste the frosting, its yummy =]
Bake another and add it on top
Ok, so they may not stack quite this nicely, they came out very domed so..
Use a knife, I used my icing spreader (so technical, right?)
Make it as flat as you can, you want that dome-y piece off.
You thought this was to make it stack better? No, this is to sacrifice to the kitchen gods, =] feel free to sample it after the ritual..
Yeah, you're going to want some frosting in there too
Not only adorable but delicious also =] this cake has served well as both breakfast and late night snack, the frosting is a little tart for my taste but I didn't actually measure anything nor did I really follow the recipe so I have only myself to blame. Not that it is in any way disappointing, because its not, it's amazing. I really like it and I recommend it. Give it a try!
